Vanilla Cupcakes with Blackberry Buttercream


Ingredients:
  • 3 cups sifted all-purpose flour
  • 1 Tbsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 2 cups sugar
  • 4 eggs
  • 1¼ cups buttermilk
  • 1½ tsp vanilla extract
  • 1 small jar lemon curd
  • FROSTING
  • ½ cup blackberries, pureed and strained
  • 1 cup (2 sticks) unsalted butter
  • 4 cups confectioner’s sugar
  • ¼ tsp salt
  • Additional blackberries for garnish
