- 450g/1lb prawns,
- 36 small mussels
- 100g/4oz monkfish fillet, thinly sliced
- 50g/2oz squid, cleaned and thinly sliced
- For the sauce :
- 25ml/1fl oz olive oil
- 1 garlic clove, chopped
- 1 carrot, chopped
- 1 celery stick, chopped
- 1 small onion, chopped
- 1 small leek, chopped
- ¼ red chilli, chopped
- 1 tomato, chopped
- 1/8 tsp saffron
- 900ml/1½pt fish stock
- cooking liquor from the mussels
- For the risotto
- 50g/2oz unsalted butter
- 2 shallots, chopped
- 1 garlic clove, chopped
- 350g/12oz risotto rice e.g. Arborio
- 25g/1oz parmesan ( or any other cheese)
- 1 tbsp olive oil
